Applesauce

4 peeled and cored Granny Smith apples

2 ½ cups apple juice

½ tsp cinnamon

½ c sugar

 

Cut the apples into cubes and place in a pot with the rest of the ingredients.

Simmer until the apples fall apart and the liquid has reduced to a desired consistency.

Stir and check for browning frequently.

Let cool slightly and place in a blender to puree.

Goes well with potato pancakes.
