Sponge;

1 c water

2 tsp yeast

1 c bread flour

¼ c rye flour

2 tsp sugar

let proof for ½ hr

Dough;

Sponge

2 ¼ c water

½ c olive oil

7 c bread flour

2 tsp sea salt

Combine sponge with the rest in a mixer with a dough hook and let mix for 7 min .

Place in a covered bowl to proof for an hour .

Portion and proof. Then roll and grill.
