4 grated Yukon Gold potatoes. B size.

1 and ½ cups oil of choice.

1 ten-inch skillet with a heavy bottom. Such as All Clad.

Salt and pepper to taste

First, heat the pan and oil over medium high heat for three to four minutes.

While oil heats, grate the potatoes and do not rinse or drain them.

When oil is hot place potatoes in small piles of size desired into the oil.

Fry for about 4 to 5 minuets per side or until the edges become crisp and golden.

Turn and repeat. Tip; do not move them around too often so as not to disturb the even flat crust.
