Stuffed Red Bells
* 2 red bell peppers

* 1 cup grated jack cheese

* 1 cup grated cheddar cheese

* 1/2 cup bread crumbs

* 1/2 teapsoon salt

* 1/2 teaspoon pepper

* 1 teapsoon chili powder

* 3 cloves crushed garlic

* 2 tablespoons olive oil

Cut out green core at top of bell peppers. Cut peppers in half from top to bottom and clean out excess pulp and seeds. In bowl combine cheeses, bread crumbs, salt, pepper, chili powder, garlic and 1 tablespoon of the olive oil. Let stand at room temperature for about 15 minutes. Stuff cheese mixture into bell peppers and rub outer skin of peppers with remaining olive oil. Grill peppers on high heat until skins are charred and cheese is melted (about 7 minutes) - then, of course, MANGIA!!!!
