Yucca Fries with cilantro and garlic

1 large peeled yucca root
Cut into French fry shape and length. Bring to a boil in salted water. Cook through , but not too soft.

Drain and dry. When dry, fry in ½ inch of corn oil to a golden color. Drain excess oil and salt to taste.

Cilantro and garlic dressing

2 tsp fine chopped garlic

¼ cup corn or vegetable oil

1 tsp chopped cilantro

1tsp lime juice

Cook the garlic and oil together on low heat until the garlic becomes soft, but not brown.

Let cool and add in the cilantro and lime juice, stir well and pour over the fries.
