Country-Style Sweet Potatoes - Chef Gregg Prawdzik from Dan's fresh Produce

Serves 4-6 people

Whether to call them sweet potatoes or yams has always been confusing to me and definitely depends upon where you live. Either way, use the red varieties for this recipe, e.g., garnets, beauregards, etc.

4 lb red sweet potatoes

1 tbsp butter

½ cup brown sugar

¼ cup black molasses

1.5 cup orange juice

4 ea bay leaf

4 each cinnamon stick or 1 tsp ground cinnamon

Salt and pepper to taste


Peel and chop potatoes into 1 inch cubes. Use butter to grease a 9 x13 baking dish.

Set oven to 350F



In a large bowl add all ingredients and toss to coat. Pour into prepared baking dish and evenly distribute the potatoes, bay leaves and cinnamon sticks.

Cover and bake for 30 minutes. Uncover and stir to evenly redistribute the ingredients. Return to oven uncovered and continue baking until browned on top (approx. 30 minutes).
