Garden Potatoes

5 golden or red small new potatoes, washed but with skin on, cut into quarters
1 clove of garlic, chopped
1/3c red onion, chopped
1 head of broccoli, chopped
1c corn (canned, frozen or fresh)
2 carrots, chopped
1 red pepper, seeds removed, chopped
2c cheese (it's good to mix different cheese to make up the 2 cups)
1/4c olive oil
salt, pepper and seasonings to taste

Put potatoes in 9x13 baking pan and coat with olive oil. Add salt, pepper and seasonings and mix well.

Bake in preheated 450 oven for about 45 minutes, until potatoes are golden and tender. Add vegetables, mix well and bake for an additional 10-15minutes. Add cheese and bake for additional 5 minutes. Remove from oven and serve.
This dish works as either a side dish or an entrée. Serve with a side salad or with your favorite meat dish.
