Valentines Panna Cotta - Gregg Prawdzik - Dan's Fresh Produce in-house Chef

What makes this perfect for Valentines Day is the addition of blood oranges for color and flavor.

½ blood orange juice, approx 3 oranges

1 envelope unflavored gelatin

2 ½ cups heavy cream

2 cup sugar

1 tsp vanilla extract



Candied Orange : Slice the rind off the blood oranges and squeeze the juice into a bowl. Clean the extra pith off the rind using a knife, and slice into ¼ inch strips.

Heat ½ cup water and 1 cup sugar in a small sauce pan, until sugar dissolves, and add orange rind. Simmer over low heat until rind is almost translucent and tender to eat. Remove from the sauce pan using a slotted spoon and arrange on a plate of ½ cup sugar to coat each rind individually so they do not clump together. Allow to cool.



Add gelatin to orange juice and set aside. Heat cream and sugar in sauce pan stirring frequently so to not scorch the pan. Allow the cream to simmer and reduce slight over the course of 10 minutes. Whisk the gelatin-orange mixture before slowly pouring into cream while whisking to prevent clumps. Bring back to a simmer for 1 minute, remove from heat and add vanilla.


Pour into 4 ramekins and allow to cool at room temperature before covering with plastic and refrigerating overnight.


Garnish with candied orange rind before serving.
