Old Queensland Blue Pumpkin Soup

  • 2 Kg Pumpkin (Old Queensland Blue) This pumpkin has a very grey tough skin. 4.4 lbs.
  • 1/2 kg of potatoes 1.1 lbs.

  • 1 large brown onion
  • 1 1/2 lt water 1.58 qts.
  • 1/2 lt milk .53 qt.
  • 250 ml cream 1.05 cups

  • Salt, pepper, Fondor or Aromat *** See below
  • Pinch nutmeg

    METHOD
    Place pumpkin, potatoes, onion all cut in small pieces into a pot, add water
    and boil until all veg is very tender. When cooked place into a blender and
puree. Place back into pot and simmer, add seasonings and milk. If soup
has not thickened enough, thicken with corn flour and water. To finish stir
in cream and add pinch of nutmeg>
