Rice Salad


1 cup uncooked brown rice

2 cups water

1 grapefruit, peeled and chopped

1 avocado, chopped

¼ cup red onion, finely chopped

cilantro, chopped, to taste

1 can cannelini beans, drained

Dressing

zest of ½ of a lime

juice of 1 lime

¼ cup olive oil

salt and pepper to taste

Boil water, add rice, reduce heat to low and cover. Cook until water is absorbed and rice is tender. Put grapefruit, avocado, onion, beans and cilantro in a bowl. Add the cooked rice and dressing, and toss.
