1 cup uncooked brown rice
2 cups water
1 grapefruit, peeled and chopped
1 avocado, chopped
¼ cup red onion, finely chopped
cilantro, chopped, to taste
1 can cannelini beans, drained
zest of ½ of
juice of 1 lime
salt and pepper to taste
|Boil water, add rice, reduce heat to low and
cover. Cook until water is absorbed and rice is tender. Put
grapefruit, avocado, onion, beans and cilantro in a bowl.
Add the cooked rice and dressing, and toss.
