Seafood Potato Salad - Charly Addison "the Crazy Cajun"
Friends, this dish is always on "special" at Dave's Cajun Kitchen in Houma, Louisiana. You can use it as an entree or a side dish. It's great, you hear.

1 potato per person(I am using 2 potatoes for this recipe.)

2 oz. butter or margarine

2 oz. crabmeat (ok to substitute canned)

2 oz. cooked shrimp (small to medium sized, remember to devein)

2 oz. sour cream

1/2 oz Chives

2 oz. Cheddar cheese

Bake potatoes in 350 degree oven for 1 hour. You may microwave them if you wish. Remove baked potatoes and wrap in aluminum foil. Split the potatoes open from the top and squeeze to soften potato. Add 1/2 of each ingredient to each potato. Return to hot oven or microwave until cheese is melted.
