“SHOO FLY” Pie - Gregg Prawdzik

Serves 4-6 people

 

I grew up on the east coast. This is a recipe that you will only find in the east. If you like pecan pie, you will love this as we incorporate the best of both pies. And please use the shortening,… ‘tis Thanksgiving after all!

 

1 9” pie crust

1 cup black strap molasses (the darkest you can find)

¾ cup boiling water

2 eggs

1 tsp baking soda

2/3 cup brown sugar

1 ¼ tbsp shortening

½ cup chopped roasted pecans

1 cup flour

MISE EN PLACE

Beat eggs. Bring water to a boil.

Combine shortening, brown sugar, pecans and flour.

Heat oven to 350F

COOKING

Mix baking soda with boiling water. Quickly wisk in eggs and molasses. Stir in ½ flour mixture until almost smooth. Pour into unbaked pie crust. Top with remaining flour mixture.
