Thanksgiving Country Hash - Chef Gregg Prawdzik from Dan's Fresh Produce

Serves 4-6 people

Here is a recipe that can substitute for mashed potatoes. The benefits are less butter fat and less complex carbohydrates.

2 lb carrots

1 ea rutabaga

1 ea turnip

1 lb parsnips

1 lb sunchokes

¼ cup olive oil or chicken/turkey fat

2 clove garlic, minced

½ bunch fresh whole thyme

¼ cup chicken or turkey stock

Salt and pepper to taste

MISE EN PLACE :

Peel and chop all root vegetables into 1-inch cubes. Into a large bowl, add vegetables, garlic, thyme, oil or fat, salt and pepper to taste.

 

Heat chicken stock to a simmer and keep warm.

Set oven to 350F

COOKING:

Transfer vegetables to a baking sheet and bake in oven for 20 minutes or until fork tender and slightly browned.

Use a food mill to mash the vegetables or you can use a mixer (low speed). Add stock, salt and pepper and incorporate to taste.
