Veggie - Lebni Lasagna
Rainbow Lasagna – A Dan’s Fresh Produce exclusive item

1 package “Il Pozzo del Re” plaid lasagna noodles, cooked and drained
1 container Lebni yogurt
2 containers Homestead Pasta Meat Sauce, thawed and heated
1 Rumiano mozzarella, grated or cubed (save some for top of lasagna)
1 small yogurt cheese, grated or cubed
1 can black olives, chopped
1 jar artichoke hearts, chopped
handful of mushrooms, sliced and sautéed
handful of baby spinach, washed and chopped

Mix veggies in meat sauce and put thin layer in bottom of baking pan. Put on layer of lasagna noodles. Mix the Lebni, mozzarella and yogurt cheeses, layer them on top of lasagna noodles. Put more sauce on top of cheese, then more noodles, sauce and saved mozzarella. Top it all with a sprinkling of parmesan. Cover with foil and bake at 425 for 45 mins. Remove foil and bake for an additional 10-15 mins. Let cool 10-15 mins before slicing and serving. Great with our Phoenix Rustic Olive Bread and a Caesar salad!
